Recipes of the month:
Chilli con Carne
Dark Chocolate Chilli Mousse
Chilli Con Carne topped with cheesy
nachos, serves 4

Minced Beef (500g)
Diced onion (2)
Chilli (1 large or to your taste)
Chopped tomatoes with herbs (250g)
Tomato Puree (50g)
Kidney beans (100g)
Packet of nachos
Grated cheese (50g)
Method
Fry the onions until clear then add the
mince beef and seal. Lightly season with salt and pepper.
Add chilli (with or without seeds- its your
own choice!), and the tomato puree and tomatoes with
herbs. Cook for approx 40mins. If it starts to thicken too
much add some beef stock or water
Add the kidney beans to heat through.
Turn out the chilli mix into an oven proof
dish, top with the nachos and cheese place in the oven for 5 to 10
mins until golden and bubbling away.
Serve with fluffy white rice

Dark Chocolate Chilli
mousse, serves 4

Dark chocolate (100g)
Double Cream (300ml)
amaretto (1tbsp, or a similar liqueur)
Dried Chilli (1pinch)
Large egg white (1)
Caster sugar (50g)
Raspberries and whipped double cream for
decoration
Method
Melt Chocolate and half the cream,
then add the pinch of chilli
Put into a bowl over crushed ice
Add the rest of the cream and liqueur
Whisk until soft peaks are formed
Whisk egg whites until stiff peaks, add the
sugar a tablespoon at a time
Fold meringue into the cream and chocolate
mix
Spoon into glasses
Garnish with the whipped cream and
raspberries
Eat and enjoy! Yum!
